Pro-Tips For Soup Making
- Always sear meat before putting it into the soup. The meat will be more flavorful and a fond will develop on the bottom of the pot which will make the soup more flavorful.
- Season in layers. You should be seasoning at every step of the way with soup. Every new ingredient should get at least a little salt.
- Too watery? Keep simmering. Too thick? Add more water.
- Tomato-based soup? If you add diced tomatoes or whole plum tomatoes to a tomato-based soup, bring those tomatoes to a simmer before adding broth. This will make the tomato flavor more intense and forward.
- Add a squeeze of lemon juice to your soup at the end of the recipe, if it calls for it. This will give you a bright and delicious finished flavor.
- Never add heavy cream when the soup is boiling or simmering. Always wait until the soup comes to a rest.
- If a recipe tells you to add everything to a pot at once, it's not a recipe; it's poor planning. Cook in steps.
