Ingredient Notes and Substitutions
- Chicken Thighs. Chicken thighs are the perfect lean-to-fat ratio for skewers. Chicken breast is a suitable substitute but tends to be drier.
- Honey. Honey will help thicken the sauce.
- Mayo. Mayo is perfect for marinating skewers because it will give you a nice crispy roast from the grill. Substitute with Greek yogurt.
- Garlic. Minced garlic will be added to the marinade and the sauce for the most flavor.

How to Grill Garlic Parm Chicken Skewers
These grilled garlic parm chicken skewers basted in a lemon garlic pepper sauce make for a great dinner, and they're easy to prep in advance and cook in under 30 minutes.
Step 1: Chop chicken thighs into 1-inch squares. Place into a bowl with olive oil, may, mustard, lemon juice, salt, pepper, paprika, and minced garlic. Combine well and cover. Refrigerate for up to 4 hours.
Step 2: Preheat the grill to high heat. Place the chicken thighs onto the skewers.
Step 3: In a small saucepan, add butter and minced garlic. Saute over medium-low heat for 3 minutes. Add in the lemon juice and honey and bring to a low simmer. Remove from the heat. Separate half the sauce to cool.
Step 4: Lower the grill heat to medium. Place the skewers on the grill for 4 minutes on each side.
Step 5: Brush the skewers with the sauce when turning to coat well. Cook through until 160 degrees F. Remove them from the grill.
Step 6: Combine half of the sauce you saved with parmesan and parsley.
Step 7: Dress the skewers with the rest of the sauce. Top with parmesan and parsley. Serve immediately with some delicious summer sides like Italian Pasta Salad or Kale and Cannellini Bean Salad!
Pro-Tips
- You can skip marinating, but I prefer to marinate for at least an hour for more tender and flavorful chicken.
- Brush with sauce at every turn to keep the skewers from drying out on the grill.
- Start the grill at its highest temperature to get a crispy char on the outside of the chicken, then immediately lower it to medium.

Garlic Parm Chicken Skewers
Equipment

Ingredients

- 2 tablespoon extra virgin olive oil
- ¼ cup mayonaisse
- 2 tablespoon dijon mustard
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper

- 3 tablespoon lemon juice
Sauce
- ¼ cup butter

- 2 cloves garlic, minced
- ¼ cup lemon juice
- ¼ cup parmesan
- 2 tablespoon fresh parsley, chopped
