An easy and flavorful cold shrimp salad, perfect for sandwiches or crackers. Simply flavored with fresh vegetables and lemon juice for a delicious and fresh lunch.
2lbsshrimp, peeled and deveined with tails removed
½cupmayonnaise
½red pepper, chopped
½small red onion, chopped
3green onions, chopped to the white
2celery stalks, chopped
2tablespoonfresh parsley, chopped
1lemon
2teaspoonsalt
1teaspoonblack pepper
Instructions
Bring a pot of water to a boil over medium heat. Add half a lemon and 1 teaspoon salt. Place the shrimp in the pot and boil for 3-5 minutes, until the shrimp are opaque. Remove the shrimp from the pot and place them in a bowl of ice water to cool and stop the cooking process.
Chop the shrimp up once cooled. Combine the red pepper, celery, green onion, red onion, parsley, 1 teaspoon salt, pepper, and lemon. Then add the shrimp and mayonnaise and combine well. Cover and refrigerate for 1 hour.
Serve on a sandwich or with crackers once chilled.
Notes
Boil your own shrimp. Precooked shrimp is flavorless and rubbery. The fresher the shrimp is, the better for this dish.
Marinate for a few hours to really let the flavor infuse through the sauce.
Serve on bread or crackers. You can eat this by itself, but it's way better on crunchy bread or crackers.
