Zucchini alla Scapece is a classic Italian antipasti. My summer version is made with grilled zucchini in a mint and vinegar dressing! It's an easy side dish and can be made in under 30 minutes!
Preheat the grill to medium-high heat, approximately 450-500°F. Add the ¼ cup of olive oil, red wine vinegar, lemon juice, mint, and garlic to a small bowl. Whisk together well.
Slice zucchini into ½-inch pieces. Evenly sliced zucchini will cook evenly.
In a large bowl, combine the zucchini with salt, pepper, and 2 tablespoon of olive oil. Mix well until the zucchini is coated in olive oil.
Place the zucchini on the grill so they are flat on the grates. Cook on each side for about 4-5 minutes or until golden brown. Flip once the vegetable starts to bubble. Cook for another 4 minutes, then transfer to a serving bowl.
Combine the warm cooked zucchini with the mint dressing and toss until completely covered. Combining with the warm zucchini will allow it to absorb all of the flavor. Rest for at least 30 minutes or overnight. Serve cold or at room temperature with fresh mint garnish!

Evenly slicing the zucchini into ½-inch pieces is key to the dish's texture. This thickness works well because the zucchini can get charred edges and get soft enough to fall through the grates.
The grill will have its hot spots. You know your grill best, but the 4-5 minutes is a suggestion. Grill until the zucchini gets a golden brown color and a bubbling texture.
Dress the zucchini while it is warm so it can absorb the most flavor.
