    Why This Recipe

If you're looking for the quickest and easiest no-cook appetizer for your party, antipasto caprese skewers are the way to go. You can make these in less than 10 minutes.

Plus, you can interchange your favorite antipasto ingredients so that your guests will love them. Make some with and without olives and everyone will love it.

    Ingredient Notes and Substitutions

    Ingredients for the skewers.
    • Salami. Get whatever meat you use cut pretty thin so you can fold it, and it's not too thick. That can be off-putting. You can substitute pepperoni, prosciutto, sopressata, or any other cured meats.
    • Mozzarella pearls. I like to get the seasoned mozzarella pearls. I love the bit of spice it gives. You substitute provolone or fontina.
    • Balsamic Glaze. This can easily be made at home by simmering balsamic vinegar until it thickens. I just find it to be a slow and annoying process, so I'm willing to buy the glaze.
    • Olives. I love castelvetrano olives, but you can substitute your favorite, whether it's kalamata or manzanilla.
    • Cherry Tomatoes. Grape tomatoes are an easy substitute, but you definitely need some kind of tomatoes on the skewers.

    Pro-Tips

    1. Add 1 pepperoncini per skewer. They're a little spicy and they're great to start or end with.
    2. Load the skewers with meat if you want to make this more filling.
    3. Prepare a day in advance.
    4. Don't drizzle with balsamic glaze until you're ready to serve.

    Recipe FAQs

How far in advance can these caprese skewers be made?

1 day maximum. The mozzarella will begin to dry out as soon as you take it out of the liquid it comes in and place it in the fridge.

What kind of sauce is best for caprese skewers?

I like balsamic glaze or a Pistachio Pesto. I like to stick with cold herby sauces for this or a fruity glaze.
