Why This Recipe
If you're looking for the quickest and easiest no-cook appetizer for your party, antipasto caprese skewers are the way to go. You can make these in less than 10 minutes.
Plus, you can interchange your favorite antipasto ingredients so that your guests will love them. Make some with and without olives and everyone will love it.
Ingredient Notes and Substitutions
- Salami. Get whatever meat you use cut pretty thin so you can fold it, and it's not too thick. That can be off-putting. You can substitute pepperoni, prosciutto, sopressata, or any other cured meats.
- Mozzarella pearls. I like to get the seasoned mozzarella pearls. I love the bit of spice it gives. You substitute provolone or fontina.
- Balsamic Glaze. This can easily be made at home by simmering balsamic vinegar until it thickens. I just find it to be a slow and annoying process, so I'm willing to buy the glaze.
- Olives. I love castelvetrano olives, but you can substitute your favorite, whether it's kalamata or manzanilla.
- Cherry Tomatoes. Grape tomatoes are an easy substitute, but you definitely need some kind of tomatoes on the skewers.

How to Make Antipasto Caprese Skewers
Step 1: Load your skewers equally with all the ingredients. Refrigerate until ready to serve.
Step 2: When you're ready to serve, drizzle them with the balsamic glaze and serve.
Pro-Tips
- Add 1 pepperoncini per skewer. They're a little spicy and they're great to start or end with.
- Load the skewers with meat if you want to make this more filling.
- Prepare a day in advance.
- Don't drizzle with balsamic glaze until you're ready to serve.
Recipe FAQs
1 day maximum. The mozzarella will begin to dry out as soon as you take it out of the liquid it comes in and place it in the fridge.
I like balsamic glaze or a Pistachio Pesto. I like to stick with cold herby sauces for this or a fruity glaze.

Italian Caprese Antipasto Skewers
Equipment
- 10 skewers
Ingredients
- 2 cups cherry tomatoes
- 1.5 cups marinated artichoke hearts
- 1 cup mozzarella pearls
- 1 handful basil
- 1 cup castelvetrano olives
- ½ lb salami, thinly sliced
- 1 cup pepperoncini
- 2-3 tablespoon balsamic glaze
