    Bourbon Peach Glazed Pork Chops

    A deliciously sticky Bourbon Peach Glazed Pork Chops dish perfect to finish off the summer with sweet ripe peaches and smoky bourbon. This delicious twist on cast-iron bone-in pork chops will have your family ACTUALLY asking for more pork chops for once!

    The Secret Ingredient: Bourbon

    Do you really need to add bourbon to a recipe? Or wine? Or vodka? Could you really make a Spicy Vodka Sauce or Chicken Alla Vodka Pizza without the vodka? You could but alcohol, like bourbon or white wine, which adds complexity to the dish. Each different bourbon or type of white wine will add its own little distinct flavor profile to the dish, which makes it a secret ingredient.

    High-quality ingredients always make a difference in a dish. Using a decent bourbon will add a deliciously smoky flavor to the dish, just like a good marsala wine gives Chicken Marsala the perfect sweet nuttiness. These bourbon peach glazed pork chops combine fresh and high-quality ingredients for the best flavor combo.

    Ingredient Notes and Substitutions

    Ingredients for the recipe.
    • Pork Chops. Bone-in or boneless pork chops will work for this recipe. Cast Iron Boneless Pork Chops cook slightly faster than bone-in pork chops, so you'll have to adjust the timing.
    • Bourbon. You can substitute chicken broth for an alcohol free version. I have used Buffalo Trace and Bulleit Bourbon in this recipe. I typically use Bulleit for my Bourbon Candied Pecans.
    • Peaches. Use fresh ripe peaches. It's best to make this dish while the peaches are in season for the sweetness of the peaches.
    • Garlic. Substitute sweet onion or shallots for a mild flavor.
    • Worcestershire. The Worcestershire gives the sauce a savory flavor that will be missed otherwise. This helps balance out the bourbon and sweetness.
    • Honey. Add more honey if necessary, depending on the sweetness of the peaches.

    How to Make Bourbon Peach Glazed Pork Chops

    Step 1: Take the pork chops out of the fridge 30 minutes ahead of time. Season both sides with salt and pepper and rest while you prepare the sauce.

    Step 2: Add butter to a saucepan over medium-low heat. Once the bubbling subsides, add the pressed garlic to the pan and saute for 2 minutes.

    Step 3: Then stir in the peaches and coat them in the butter. Add the ketchup, mustard, worcestershire, honey, brown sugar, and water. Bring to a low simmer and simmer for 20 minutes, stirring occasionally.

    Step 4: Pour the sauce into a bowl and use an immersion blender to blend the sauce until smooth. Set ¼ of the sauce aside.

    Step 5: Place a cast-iron pan over medium heat. Once the pan is hot, add the olive oil. Place the pork chops in the cast iron and sear for 2 minutes until slightly golden brown on each side.

    Step 6: Flip the pork chops, and sear the opposite side while you baste the top of the pork chop with the bourbon peach sauce. Flip the pork chops every minute, brushing the top of the pork chops with sauce each time you flip them until the pork chops reach 145℉.

    Rest the pork chops and brush with the remaining ¼ of the sauce. Serve with BEST Garlic Parmesan Green Beans and Crispy Garlic Parmesan Potatoes for a full meal! Or keep the Fall theme going and serve with Creamy Pumpkin Pasta.

    1. Sear the pork chops on each side before glazing with the bourbon peach sauce to get a good crispy sear on each side.
    2. You can use a grill pan or a grill to get the same glazed results.
    3. Stir the sauce often to gauge thickness. Add more water to the sauce if it starts sticking to the pan.

    Recipe FAQs

    Why do you have to use bourbon?

    A bourbon in the sauce will add a smokiness to balance out the sweetness of the peach BBQ sauce. While bourbon can be substituted with more water or broth, the flavor adds a more complex flavor to the sauce.

    My peaches aren't ripe. What should I do?

    If you have 12-24 hours, put the peaches in a brown paper bag and put it in a cool, dark spot for as long as you can will help quicken the ripening process.

    How do you know when the pork chops are done?

    Pork chops are cooked through when they reach 145 degrees Fahrenheit.

    Ingredients
      

    • 4 bone-in pork chops
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1 tablespoon extra virgin olive oil

    • ¼ cup ketchup
    • 2 tablespoon unsalted butter
    • 1 tablespoon worcestershire sauce
    • 1 tablespoon honey
    • ¼ cup brown sugar
    • 1.5 cup fresh chopped peeled peaches
    • ⅓ cup water
    • 1.5 tablespoon dijon mustard
    • 2 cloves garlic, pressed
