The Secret Ingredient: Bourbon
Do you really need to add bourbon to a recipe? Or wine? Or vodka? Could you really make a Spicy Vodka Sauce or Chicken Alla Vodka Pizza without the vodka? You could but alcohol, like bourbon or white wine, which adds complexity to the dish. Each different bourbon or type of white wine will add its own little distinct flavor profile to the dish, which makes it a secret ingredient.
High-quality ingredients always make a difference in a dish. Using a decent bourbon will add a deliciously smoky flavor to the dish, just like a good marsala wine gives Chicken Marsala the perfect sweet nuttiness. These bourbon peach glazed pork chops combine fresh and high-quality ingredients for the best flavor combo.
Ingredient Notes and Substitutions
- Pork Chops. Bone-in or boneless pork chops will work for this recipe. Cast Iron Boneless Pork Chops cook slightly faster than bone-in pork chops, so you'll have to adjust the timing.
- Bourbon. You can substitute chicken broth for an alcohol free version. I have used Buffalo Trace and Bulleit Bourbon in this recipe. I typically use Bulleit for my Bourbon Candied Pecans.
- Peaches. Use fresh ripe peaches. It's best to make this dish while the peaches are in season for the sweetness of the peaches.
- Garlic. Substitute sweet onion or shallots for a mild flavor.
- Worcestershire. The Worcestershire gives the sauce a savory flavor that will be missed otherwise. This helps balance out the bourbon and sweetness.
- Honey. Add more honey if necessary, depending on the sweetness of the peaches.

How to Make Bourbon Peach Glazed Pork Chops
Step 1: Take the pork chops out of the fridge 30 minutes ahead of time. Season both sides with salt and pepper and rest while you prepare the sauce.
Step 2: Add butter to a saucepan over medium-low heat. Once the bubbling subsides, add the pressed garlic to the pan and saute for 2 minutes.
Step 3: Then stir in the peaches and coat them in the butter. Add the ketchup, mustard, worcestershire, honey, brown sugar, and water. Bring to a low simmer and simmer for 20 minutes, stirring occasionally.
Step 4: Pour the sauce into a bowl and use an immersion blender to blend the sauce until smooth. Set ¼ of the sauce aside.
Step 5: Place a cast-iron pan over medium heat. Once the pan is hot, add the olive oil. Place the pork chops in the cast iron and sear for 2 minutes until slightly golden brown on each side.
Step 6: Flip the pork chops, and sear the opposite side while you baste the top of the pork chop with the bourbon peach sauce. Flip the pork chops every minute, brushing the top of the pork chops with sauce each time you flip them until the pork chops reach 145℉.

Recipe FAQs
A bourbon in the sauce will add a smokiness to balance out the sweetness of the peach BBQ sauce. While bourbon can be substituted with more water or broth, the flavor adds a more complex flavor to the sauce.
If you have 12-24 hours, put the peaches in a brown paper bag and put it in a cool, dark spot for as long as you can will help quicken the ripening process.

Equipment

- 4 bone-in pork chops
- 1 teaspoon salt
