These foil potatoes are an easy grilling side, simple and customizable. I love to prep these in advance, so when I start grilling, I can throw my sides on with my protein.
Preheat the grill to medium heat, 400-500℉. Toss your potatoes in a large bowl with olive oil, salt, and pepper.
Divide your potatoes into 3 equal parts and place them on foil. Then add chopped peppers and onions to the first packet. To the second packet, add lemon juice, mint, and shallots. To the third packet, add parsley and garlic. Mix the potatoes with the ingredients, and then tightly wrap the aluminum foil packet. Place in the fridge for up to 24 hours or cook immediately.
Place the foil packets on the grill and cook for 30-40 minutes, or until fork-tender. Leave the packet closed for as long as possible. The more you open the packet, the longer they will take to cook.
Remove from the grill and rest for 10 minutes, open. Then serve!
Notes
You can prepare the potatoes in the foil packets for up to a day in advance and store them in the refrigerator.
When you clean your potatoes, make sure to thoroughly dry them. The less liquid in the packet, the more caramelized and crisp the potatoes will be.
Leave the packet closed for as long as possible. The more you open the packet, the longer they will take to cook.
These are best served fresh, but I also find that this method for cooking potatoes also makes them really tasty when reheated.
