    Grilled Foil Potatoes (3 Ways)

    The easiest clean up and simplest side dish with so many variations that make grilling in the Summer feel like a breeze. My Dad always used to make these Grilled Foil Potatoes, and we have 3 different varieties for you to try when you're grilling Grilled Stuffed Pork Chops or Chicken Spiedini!

    Why Make Foil Potatoes

    I love this technique for cooking potatoes. Really, anything that can be put in a foil packet on the grill makes Summer grilling so much easier. My family used to put everything in foil packets, including potatoes, green beans, zucchini, and even broccoli rabe.

    Grilled Foil Potatoes are one of my favorite sides on the grill because you can kind of throw whatever ingredients into the packet that you want. Whatever leftover veggies or herbs you have will work, so they're perfect for a simple dinner with Grilled Lemon Pepper Chicken Thighs or another easy dish!

    Make these Grilled Foil Potatoes when you're in a rush for dinner or if you're serving a large crowd!

    Ingredient Notes and Substitutions

    Ingredients for foil potatoes.
    • Red Potatoes- I like to use a waxy potato, like a red or golden potato. Russet potatoes don't work well in this recipe because they're so starchy.
    • Herbs- You can use whatever fresh herbs you have available. I prefer to use fresh herbs with summer cooking and grilling. We used parsley for one pack and mint for another! Mint is great with lemon on the grill, and we also use it to make a classic Italian dish, Zucchini alla Scapece.
    • Salt- Salting your potatoes is key to the flavor. If you don't salt enough, they will be bland regardless of what you add to them. Salting 24 hours in advance can help tremendously with flavor!

    How to Make Grilled Foil Potatoes (3 ways)

    Grilled foil potatoes are simple to prepare in under 15 minutes, especially if you're only doing them in one style!

    In the image above, we prepared 3 different combinations of ingredients for foil potatoes 3 ways, but you can just choose 1 if that's easier for your family. Each set of ingredients is perfect for 1 lb of potatoes.

    Step 1: Preheat the grill to medium heat, 400-500℉. Toss your potatoes in a large bowl with olive oil, salt, and pepper.

    Step 2: Divide your potatoes into 3 equal parts and place them on foil. Then add chopped peppers and onions to the first packet. To the second packet, add lemon juice, mint, and shallots. To the third packet, add parsley and garlic. Mix the potatoes with the ingredients, and then tightly wrap the aluminum foil packet.

    Step 3: Place the foil packets on the grill and cook for 30-40 minutes, or until fork-tender.

    Step 4: Remove from the grill and rest for 10 minutes, open. Then serve!

    Grilled foil potatoes are my favorite hot starchy side to grill because of the easy clean up and simple prep. They're delicious and should be served with other Summer classics like Italian Sausage and Peppers or Italian Ring Sausage (Chevalatta).

    Pro-Tips

    1. Prep- You can prepare the potatoes in the foil packets for up to a day in advance and store them in the refrigerator.
    2. Water- When you clean your potatoes, make sure to thoroughly dry them. The less liquid in the packet, the more caramelized and crisp the potatoes will be.
    3. Cooking time- Leave the packet closed for as long as possible. The more you open the packet, the longer they will take to cook.
    4. Serving- These are best served fresh, but I also find that this method for cooking potatoes also makes them really tasty when reheated.

    Variations on the Recipe

    Beyond our 3 ways, there are plenty of variations to try with your foil potatoes.

    • Rosemary, thyme, and garlic
    • Cilantro, lime, and jalapeno.
    • Dill and red onion
    • Caramelized onions and parsley
    • Seasoning- We season our foil potatoes with salt and pepper to keep it really simple! You can add things like cayenne pepper to spice them up or paprika to give them a smoky flavor.

    FAQs about Foil Potatoes

    How can I serve foil potatoes to a large party?

    Instead of using aluminum foil, use an aluminum tray and wrap it with the aluminum foil. You will be able to fit way more potatoes, and the tray makes it easy to travel with or transfer to a table for people to serve themselves.

    Why are my potatoes getting burnt on the bottom of the aluminum foil?

    The grill flame is too high. Lower the heat so that the flame isn't burning them. Or move your potatoes to a higher place in the grill if possible.

    I can't close my foil pack completely around the potatoes. What should I do?

    Use another piece of foil and just wrap the top of your pack.

    Serving Suggestions for Grilled Potatoes

    Grilled foil potatoes are perfect for serving with your summer favorites! Make grilling these classics easy with this simple addition.

    • Proteins- Serve these foil potatoes along with some of your other grilled proteins like Spicy Chipotle Chicken Skewers, Garlic Parm Chicken Skewers, or a Big Fat Greek Chicken Burger!
    • Grilled Veggies- Grill the potatoes alongside some grilled vegetables like simple grilled eggplant, squash, or zucchini!
    • Cold Sides- Prepare some cold sides in advance to serve with these foil potatoes, like Kale and Cannellini Bean Salad, Antipasto Caprese Skewers, or a simple salad with Traditional Caesar Dressing.

    Ingredients
      

    • 3 lbs baby red potatoes, halved
    • ¼ cup olive oil
    • 1 tablespoon kosher salt
    • 1 teaspoon black pepper
    • 1 red pepper, chopped
    • 1 small yellow onion, chopped
    • 2 tablespoon freshly squeezed lemon juice
    • ¼ cup fresh mint, chopped
    • 1 shallot, chopped
    • ¼ cup fresh parsley, chopped
    • 3 cloves garlic, minced

    Instructions
