    An Easy Breakfast

    Mascarpone is a cheese that often gets left out of meals. It gets used for all different kinds of desserts, but mascarpone toast with lox for breakfast is an easy way to switch up your weekend breakfast with something new.

    Mascarpone is a slightly sweeter version of cream cheese and pairs well with the savory lox. Drizzle it with a delicious high-quality olive oil for a quick breakfast like our EASY Ricotta Bruschetta.

    Ingredient Notes and Substitutions

    Ingredients for the recipe

    Mascarpone. The whole purpose of this recipe is to switch it up and use mascarpone but if you want to substitute something, cream cheese would work.

    Bread. High-quality toast is key here! I love this on fresh sourdough bread. It's crunchy and delicious.

    Variations

    • We use mascarpone combined with thyme but you could substitute sage, parsley, or dill
    • Switch out the lox with one of our other delicious toast toppings like Eggplant Caponatini (Caponata) or Marinated Eggplant and Onion.
    • Make it a lunch and swap the mascarpone out with our Pistachio Pesto or Pea Pesto!

    How to make Mascarpone Toast with Lox

    Step 1: Toast your bread

    Mascarpone combined with thyme, lemon zest, and seasoning.

    Step 2: Mix your herbs, lemon zest, and spices with the mascarpone cheese. Save ½ tablespoon of zest for garnish.

    Step 3: Shmear your mascarpone on your toast.

    Step 4: Lay your lox on top of that. Sprinkle on the lemon zest, a little extra thyme, lemon juice, and drizzle your mascarpone toast with lox with a little EVOO.

    Pro-Tips

    1. Don't mix the lemon juice in with the mascarpone. It will cause it to curdle.
    2. Use any herbs that you like. Sometimes we'll use parsley or sage instead of thyme. I'm a big proponent of using whatever is available in the fridge.
    3. When you toast sourdough bread, never press the toast button on the toaster. It dries out the bread too much and it gets hard. Put it on bake in your toaster or at a lower temperature, or put it in a pan with a little olive oil to warm it up.

    What else can I do with Mascarpone?

    Use this herb mascarpone as a cheese dip for raw vegetables, crudité. Shmear it bagels, sandwiches, or crackers. Or make cold-cut roll-ups using turkey or roast beef. I prefer it as mascarpone toast but, it is a pretty versatile ingredient with a little more depth than cream cheese.

    What are Lox?

    Lox are a fillet of brined salmon. The process is very similar to curing. They are a delicious addition to mascarpone on toast or cream cheese on a bagel.

    This toast recipe is a perfect brunch appetizer or feature. Spicy, herb mascarpone with lox drizzled with extra virgin olive oil finished with bits of sea salt make for the perfect combination for an easy healthy breakfast.

    Ingredients
      

    • ½ Cup Mascarpone
    • 14 oz Lox
    • 2 tablespoon Fresh Thyme
    • 1 tablespoon Lemon Juice
    • ½ tsp salt
    • ½ tsp black pepper
    • ½ teaspoon crushed red pepper
    • 1 tablespoon Extra virgin olive oil
    • 1.5 teaspoon Lemon zest
    • 2-3 Slices Bread

    Instructions
     

    • Toast your bread
