
The mushroom onion swiss grilled cheese is an absolute CROWD PLEASER. My wife asked for this the other day and I could not have been happier. The cheesy gooey mess inside of the golden brown crunchy sourdough bread is the answer to all of your problems. Mushrooms and swiss go together like green eggs and ham. The onions and gruyere combine for a creamy cheese pull to peak your visual senses and perk up your appetite if the smell of the sauteed mushrooms and onions doesn't already have you salivating for this grilled cheese.
I've made this sandwich several times for my wife, and it always makes for a very happy day. No one is happier than my wife after she crushes a grilled cheese, especially my mushroom onion swiss grilled cheese. It is so easy to put together and is done in less than a half hour.
Why should you wait that long for grilled cheese, you ask? If you're that impatient, go throw some Kraft American cheese on a piece of toast and take a hike. This sandwich is for grilled cheese lovers. I could honestly eat 3 of these sandwiches, they are so addicting.

This list of ingredients is to make one mushroom onion swiss grilled cheese. Just double the recipe up as you start to add more sandwiches!

- 2 slices bread, sourdough
- ½ cup grated baby swiss
- ½ cup grated cheddar/gruyere
- ½ medium onion, sliced thin
- 1 cup mushrooms, sliced
- 1 tsp Worcestershire sauce
- ¼ cup white wine
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp butter
The Perfect Grilled Cheese Process
Before we get started on the grilled cheese, we have to saute the mushrooms and onions. This part is easy and it takes 10 to 15 minutes.
In a large pan, add olive oil and bring the pan medium-high heat. Add the onions and mushrooms, and stir until they are coated with oil. Saute for 3 minutes. Then pour in the white wine and Worcestershire. Stir and saute for 8 minutes or so until the wine is reduced and absorbed by the onions and the onions and mushrooms are caramelized. Season them with salt and pepper.
Set the mushroom and onions aside as you prepare the sandwich.
Preparing the Grilled Cheese

Lay out the slices of bread, and put a layer of cheese on top. I chose to go with a combination of baby swiss and cheddar/gruyere mix, both of which I purchased at Trader Joe's. I always buy blocks of cheese because they are easier to store and are a little more versatile than a bag.
The first time we made this sandwich, we strictly used swiss cheese, but it was absolutely missing something and it didn't have that cheese pull you love to see. The cheddar and gruyere added another layer of flavor and made the sandwich THAT MUCH BETTER.
Top the first layer of cheese with the mushrooms and onions. Add another layer of cheese and then set the slice of bread on top.
Frying the Mushroom Onion Swiss Grilled Cheese
In a pan, bring a tablespoon of butter to medium heat and melt until the foam subsides. Place the sandwich on the butter and press down slightly. Let the sandwich sit for three minutes, UNDISTURBED. Then check the bottom by lifting the grilled cheese up to make sure it developed a golden brown crust. If not let it cook for another minute or two.
Flip the sandwich but before placing it back in the pan, add another tablespoon of butter. Place the sandwich down and press slightly again with the spatula. Remove the sandwich after another 3 minutes.
Serve this sandwich as is, or with a little blue cheese for dipping. It is so incredibly tasty that it should never be underestimated. It is our family motivator and attitude adjuster.

Mushroom Onion Swiss Grilled Cheese
Ingredients

- Add 1 tablespoon of butter to the pan and melt over medium heat. Place the sandwich on the pan and fry until golden brown, about 3 minutes. Remove and add 1 more tablespoon of butter. Flip the sandwich and fry for 3 more minutes.
