
Mascarpone is a cheese that often gets left out of meals. It gets used for all different kinds of desserts, but mascarpone toast for breakfast is an easy way to switch up your weekend breakfast with something new.
Where we come from, Long Island, lox are everywhere. Maybe that's true in other cities too, but from my experience, it's nothing compared to long island. Every corner on Long Island has a bagel store and every bagel store has lox. Lox go so well with vegetable cream cheese, so we thought a great way to change it up would be to have some lox on toast with herb mascarpone cheese.
Herb Mascarpone
Vegetable cheese was my go-to when I would get a bagel. I rarely eat bagels anymore because I truly believe that they only taste good in New York or New Jersey. Think what you want, but it's a fact. The thing is vegetable cream cheese varies from each bagel store. With this herb mascarpone, we wanted to capture our favorite flavors without so many of the chunky vegetables since we are shmearing it on sourdough toast.
Ingredients
- ½ Cup Mascarpone
- 14 oz Lox
- 2 tbsp Fresh Thyme
- 1 tbsp Lemon Juice
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp crushed red pepper
- ¼ tsp garlic powder
- 1 tbsp Extra virgin olive oil
- 1.5 tsp Lemon zest
- 2-3 Slices Bread
We chose to add fresh thyme along with some spices including garlic powder, salt, pepper, and red pepper flakes. This flavor was perfect. If you make the mascarpone a day ahead of time, I would leave out the lemon juice because it will curdle the mascarpone.
Use any herbs that you like. Sometimes we'll use parsley or sage instead thyme. I'm a big proponent of using whatever is available in the fridge.
Sourdough Toast
Like the good little food bloggers we are, we have developed a taste for the finer things, sourdough bread. Marisa has been nurturing her little sourdough starter all summer working on improving her sourdough bread-making skills. Sourdough bread is perfect for mascarpone toast because it is just crunchy enough not to need anything extra added into the shmear, like vegetables, such as celery, peppers, or red onion.
When we toast our sourdough bread, Marisa has taught me never to press the toast button on the toaster. It dries out the bread too much and it gets hard. When you are making sourdough toast, put it on bake in your toaster or at a lower temperature, or put it in a pan with a little olive oil to warm it up.

What else can I do with Mascarpone?
Use this herb mascarpone as a cheese dip for raw vegetables, crudité. Shmear it bagels, sandwiches, or crackers. Or make cold-cut roll-ups using turkey or roast beef. I personally prefer it as mascarpone toast but, it is a pretty versatile ingredient with a little more depth than cream cheese. We used Trader Joe's Mascarpone cheese. I think they have some of the best available cheese selections with the closest to an authentic taste that you can get accessibly.

Mascarpone Toast with Lox
Ingredients
- ½ Cup Mascarpone
- 14 oz Lox
- 2 tablespoon Fresh Thyme
- 1 tablespoon Lemon Juice
- ½ tsp salt
- ½ tsp black pepper
- ½ teaspoon crushed red pepper
- ¼ teaspoon garlic powder
- 1 tablespoon Extra virgin olive oil
- 1.5 teaspoon Lemon zest
- 2-3 Slices Bread
Instructions
- Toast your bread
- Mix your herbs, lemon zest, and spices together with the mascarpone cheese. Save ½ tablespoon of zest for garnish.
- Shmear your mascarpone on your toast and lay your lox on top of that. Sprinkle on the lemon zest, a little extra thyme, lemon juice, and drizzle with EVOO.
