    Gruyere Grilled Cheese

    The gruyere grilled cheese with mushrooms and onions is an absolute CROWD PLEASER comfort meal that you can make in 30 minutes. The cheesy gooey mess inside the golden brown crunchy sourdough bread is the answer to all your problems. You can't beat the combination of flavors with shredded gruyere and baby swiss!

    Why this Recipe

    A combination of baby swiss and gruyere combine for a creamy cheese pull. Add in the sauteed mushrooms and onions and you'll be salivating. With a sandwich that takes less than 30 minutes to put together, you'll love this. Pair it with our Sausage and Lentil Soup or Creamy Potato and Onion Soup for a perfect lunch!

    Why should you wait 30 minutes for this gruyere grilled cheese, you ask? If you're that impatient, go throw some Kraft American cheese on a piece of toast and take a hike. This sandwich is for grilled cheese lovers. Sometimes a little love for a sandwich takes time, like our equally tasty Peppers and Eggs Sandwich or Hot Honey Chicken Sandwich.

    Ingredient Notes and Substitutions

    Ingredients for the grilled cheese.
    • Cheese. I love the combination of gruyere and baby swiss. It gives an intense flavor with a creamy texture. There's nothing wrong with substituting in some cheddar!
    • Mushrooms. I love the mild flavor of baby bellas for this recipe but shitake mushrooms can be substituted for a more earthy flavor. Whenever I want the mushrooms to be just a buttery addition, I stick with baby bellas, similar to our Creamy Mushroom Pasta.
    • Butter. Go heavy on the butter. It may seem like a lot but it will help get you that buttery crunchy toasted bread that is the signature of a good grilled cheese.
    • White wine. I always go with a sauvignon blanc when I'm cooking with white wine. It's the perfect amount of sweet and crisp.

    How to Make a Gruyere Grilled Cheese

    Step 1: Grate your cheese up using the largest hole on the grater. We call this the gruyere grilled cheese because the gruyere is the star of the show, but we also use baby swiss.

    Step 2: In a large pan, add olive oil and bring the pan to medium heat. Add the onions and mushrooms, and stir until they are coated with oil. Saute for 5 minutes. Then pour in the white wine and Worcestershire.

    Step 3: Stir and saute for 8 minutes until the wine is reduced and absorbed by the onions and the onions and mushrooms are caramelized. Season them with salt and pepper. Set them aside.

    Step 4: Lay out the slices of bread, and put a layer of cheese on top. Top the first layer of cheese with the mushrooms and onions. Add another layer of cheese and then set the slice of bread on top.

    Step 5: In a pan, bring 2 tablespoon of butter to medium heat and melt until the foam subsides. Place the sandwiches on the butter and press down slightly. Let them sit for three minutes, UNDISTURBED. Then check the bottom by lifting the grilled cheese up to make sure it developed a golden brown crust. If not let it cook for another minute or two.

    Step 6: Flip the sandwich but before placing it back in the pan, add another 2 tablespoon of butter. Place the sandwich down and press slightly again with the spatula. Remove the sandwich after another 3 minutes.

    A gruyere grilled cheese is so incredibly tasty. It is our family motivator and attitude adjuster.     Pro-Tips

    1. Always buy blocks of cheese because they are easier to store and are a little more versatile than a bag of cheese. Also, pre-grated cheese doesn't melt as well.
    2. If you're looking for a sandwich with a nice cheese pull you can't just use swiss. You need something like cheddar or gruyere for the cheesy action.
    3. Take your time when caramelizing the mushrooms and onions. When they start looking sticky they're ready.

    What is the best cheese for a grilled cheese?

    You want to use a cheese that is creamy when melted and gives you a good cheese pull. But you also don't want that cheese pull to go on forever. I wouldn't use mozzarella or swiss on their own. Cheddar, gruyere, and American cheese will be the best options for grilled cheese!

    Is Gruyère a good melting cheese?

    It is one of the best! That's why I paired it up with swiss, which is a terrible melting cheese! These two together do great work!

    Ingredients
      

    • 4 slices bread, sourdough
    • ¾ cup grated gruyere
    • ¾ cup grated baby swiss
    • ½ medium onion, sliced thin
    • 2 cup mushrooms, sliced
    • 1 tablespoon worcestershire
    • ½ cup white wine
    • 2 tablespoon olive oil
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 4 tablespoon butter

    Instructions
